About The Name...

Sap Chapel embodies the spirit and the passion of our sugar making process. On its perch within earshot of the iconic Clarksburg Falls at the bend of  the south fork of 18 Mile Creek our little operation was built in full view of our beloved 19th century hamlet welcoming our friends and neighbors. Our 14" brass bell rings throughout season letting everyone know its maple time!  

All of our sap is collected right here in Clarksburg and the product you receive is made exclusively here at the Sap Chapel. When you buy "100% Pure NY Maple" at the store, its a blend from producers all over NYS. Nothing wrong with that. However, when you enjoy Sap Chapel brand 100% pure maple Luxury Nourishment you know and taste what is Uniquely Divine from our hill here in Clarksburg. Each sugar house has its own characteristics and much of that is lost in this modern era of industrial scale maple farming. When you buy Sap Chapel you know where it came from: The Heart. 

We enjoy an intimate relationship with our woods. Unlike the modern industrial sized sugar makers we are running our modest 978 tap operation with a minimum environmental  impact and low carbon footprint.  In addition to "ye ol' bucket" method our sap is collected using food grade 3/16 tubing which creates natural vacuum, leveraging the gravity of our steep hillside to guide the sap right to the Chapel. This allows us to collect sap without being dependent on electric or gas pumps.

Adding to the flavor profile and in keeping with traditional maple syrup rendering we use a wood fired arch rather than fossil fuel sources to boil the sap into what will become our Luxury Nourishment. The firewood is retrieved from our woodlot keeping our woods tidy and healthy.
